Pork Chops, Chard, peanut butter, microwave

In the midst of a chaotic day, there’s nothing quite like a warm, comforting meal to soothe the soul. This recipe, perfect for four, combines the richness of pork chops with the earthy sweetness of chard and a creamy peanut butter sauce, all within a low-carb framework.

Ingredients

  • 4 pork chops (1 1/2 pounds)
  • 2 bunches of chard, stems removed and chopped
  • 2 tablespoons of peanut butter
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat a skillet over medium-high heat.
  2. Season the pork chops with salt and pepper on both sides.
  3. Add the olive oil to the skillet and sear the pork chops for 3-4 minutes on each side, or until cooked to your desired level of doneness. Transfer the pork chops to a plate and set aside.
  4. Microwave the chopped chard in 30-second increments, stirring between each interval, until wilted and tender. This should take around 2-3 minutes.
  5. In a small bowl, whisk together the peanut butter and a pinch of salt and pepper until smooth.
  6. Serve the pork chops with the wilted chard and drizzle with the peanut butter sauce.
