A perfect dish for a family gathering, packed with flavor and nutrients!

  • 1.5 kg pork roast
  • 2 bunches of kale, stems removed and chopped
  • 2 tbsp honey
  • Salt and pepper to taste

  1. Preheat the oven to 220°C (425°F).
  2. In a small bowl, mix together the honey, salt, and pepper to create a glaze.
  3. Score the fat on the pork roast in a crisscross pattern, cutting about 1/2 cm deep.
  4. Place the pork roast in a large roasting pan, and brush the honey glaze all over the meat, making sure to get some in the scored lines.
  5. Roast the pork in the preheated oven for 30 minutes, then reduce the heat to 180°C (350°F) and continue roasting for another 30 minutes per kilogram, or until the meat is cooked through.
  6. While the pork is roasting, toss the chopped kale with a pinch of salt and a drizzle of olive oil in a large bowl.
  7. After the pork has roasted for 45 minutes, add the kale to the roasting pan, spreading it out in a single layer around the meat.
  8. Return the pan to the oven and continue roasting for another 15-20 minutes, or until the kale is tender and caramelized.
  9. Remove the pan from the oven, and let the pork rest for 10-15 minutes before slicing and serving with the deliciously roasted kale.
