Artichoke Mustard Crusted Delight

Roast, Artichoke, mustard, skillet
A flavor explosion that combines tangy mustard, sweet artichoke hearts, and rich beef in under 30 minutes!
Ingredients
- 1 (2-3 pound) beef roast
- 2 large artichoke hearts, canned or marinated
- 2 tablespoons whole-grain mustard
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 large skillet, preferably cast-iron
Instructions
- Preheat that skillet over medium-high heat.
- Season the beef roast with salt and pepper, making sure to coat it evenly.
- Sear the roast in the skillet for 2-3 minutes on each side, or until browned.
- Add the artichoke hearts, mustard, and olive oil to the skillet.
- Transfer the skillet to the preheated oven (400°F) and roast for 20-25 minutes, or until the beef reaches your desired level of doneness.
- Let it rest for 5-10 minutes before slicing and serving.
