  • 1 lb Stir Fry Beef
  • 2 medium Beets, peeled and sliced
  • 1 cup Chocolate chips (at least 70% cocoa)
  • 1 Crockpot
  • 2 tbsp Olive oil
  • 1 tsp Ground cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)


  1. 1. Prep the ingredients: Slice the beef into thin strips and season with salt, pepper, and cumin. Peel and slice the beets into thin wedges.
  2. 2. Sear the beef: Heat the olive oil in a pan over medium-high heat. Add the beef and cook for 2-3 minutes, or until browned. Remove from heat and set aside.
  3. 3. Add to crockpot: Add the browned beef, sliced beets, and chocolate chips to the crockpot. Stir to combine.
  4. 4. Cook on low: Cook on low for 6-8 hours or high for 3-4 hours.
  5. 5. Serve and garnish: Serve hot, garnished with chopped fresh parsley if desired.
