As the seasons change and the air grows crisper, I find myself craving warm, comforting dishes that nourish both body and soul. This sweet potato and corn stew, cooked to tender perfection in a trusty crockpot, is just the thing to satisfy those cravings.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 cup of corn kernels (fresh or frozen, thawed)
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon of dried thyme
- 1/2 teaspoon of paprika
Instructions
- In the crockpot, combine the sweet potatoes, corn kernels, garlic, olive oil, salt, pepper, thyme, and paprika. Stir gently to combine.
