A Hearty Sweet Potato and Corn Stew for a Cozy Gathering

As the seasons change and the air grows crisper, I find myself craving warm, comforting dishes that nourish both body and soul. This sweet potato and corn stew, cooked to tender perfection in a trusty crockpot, is just the thing to satisfy those cravings.


  • 2 large sweet potatoes, peeled and cubed
  • 1 cup of corn kernels (fresh or frozen, thawed)
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of paprika


  1. In the crockpot, combine the sweet potatoes, corn kernels, garlic, olive oil, salt, pepper, thyme, and paprika. Stir gently to combine.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until the sweet potatoes are tender and the flavors have melded together beautifully.
  3. About 30 minutes before serving, stir the stew gently to redistribute the ingredients.
  4. Serve hot, garnished with fresh herbs if desired.
