Ingredients
- 1 cup chia seeds
- 2 cups mixed mushrooms (such as shiitake, cremini, and button), sliced
- 2 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 cups vegetable broth
- Fresh cilantro, chopped (optional)
Instructions
- Prepare the chia seeds: Rinse the chia seeds and soak them in water for at least 30 minutes. Drain and set aside.
- Sauté the mushrooms: Heat the olive oil in the pressure cooker over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.

- Season and serve: Open the pressure cooker and season the mixture with salt and pepper to taste. Garnish with chopped fresh cilantro, if desired. Serve hot, divided among 4 plates.
