A delicious and healthy recipe that combines the goodness of chia seeds, mushrooms, and aromatic spices, all cooked to perfection in a pressure cooker. This dish is perfect for a family dinner, promoting healthy eating and togetherness.


  • 1 cup chia seeds
  • 2 cups mixed mushrooms (such as shiitake, cremini, and button), sliced
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cups vegetable broth
  • Fresh cilantro, chopped (optional)


  1. Prepare the chia seeds: Rinse the chia seeds and soak them in water for at least 30 minutes. Drain and set aside.
  2. Sauté the mushrooms: Heat the olive oil in the pressure cooker over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
  3. Add spices and chia seeds: Add the cumin, paprika, and chili powder to the pressure cooker. Stir for 1 minute. Then, add the soaked chia seeds and stir to combine.
  4. Add broth and cook: Add the vegetable broth to the pressure cooker. Close the lid and cook at high pressure for 10 minutes. Let the pressure release naturally for 5 minutes, then quick-release any remaining pressure.
  5. Season and serve: Open the pressure cooker and season the mixture with salt and pepper to taste. Garnish with chopped fresh cilantro, if desired. Serve hot, divided among 4 plates.
