As the winter nights draw in, there’s nothing quite like a satisfying, comforting roast to warm the heart and soul. This recipe, featuring a tender pork roast smothered in a rich, peanut butter-infused leek crust, is sure to become a staple in your kitchen.

  • 1.5 kg pork roast
  • 2 large leeks, cleaned and chopped
  • 2 tbsp peanut butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

  1. Preheat your oven to 200°C (400°F).
  2. [Rubs hands together in anticipation] In a large frying pan, heat the olive oil over medium heat. Add the chopped leeks and cook until they're softened and caramelized, stirring occasionally. This will take about 20-25 minutes.
  3. [Stirs leeks with a wooden spoon, inhaling the aroma]
  4. In a small bowl, mix the peanut butter with a pinch of salt and pepper. [Tastes the peanut butter mixture with a finger, nods in approval]
  5. Remove the leeks from the heat and let them cool slightly. Stir in the peanut butter mixture until well combined.
  6. [Pats the pork roast dry with a paper towel] Season the pork roast with salt and pepper.
  7. Spread the leek and peanut butter mixture evenly over the pork roast, making sure to cover the entire surface.
  8. Place the pork roast in a roasting pan and put it in the oven. Roast for about 45-50 minutes per kilogram, or until the meat is cooked through and the crust is golden brown.
  9. [Places the roasting pan in the oven, sets the timer, and takes a step back to admire the dish]
  10. Once the pork roast is done, let it rest for 10-15 minutes before slicing and serving.
