Air-Fried Edamame and Bok Choy Delight

A bloody fantastic Mexican-inspired dish using edamame and bok choy that promises to make these ingredients sing in your mouth.
Ingredients
- 2 cups of edamame (shelled)
- 4 heads of bok choy (cleaned and chopped)
- 3 tablespoons of olive oil
- Salt, to taste
- Pepper, to taste
- 1 teaspoon of smoked paprika
- 1 teaspoon of chili powder
- 1 lime, cut into wedges
Instructions
- Clean and chop the bok choy.
- Shell the edamame if they're not already shelled.
- In a large mixing bowl, toss the edamame and bok choy with olive oil.
- Season with salt, pepper, smoked paprika, and chili powder. Mix well.
- Set your air fryer to 375°F (190°C).
- Place the seasoned edamame and bok choy in the air fryer basket.
- Air fry for 10-12 minutes, shaking the basket halfway through to ensure even cooking.
- Once cooked, transfer the vegetables to a serving dish.
- Squeeze fresh lime juice over the top for that extra zing. Serve immediately.
