This delicious gluten-free recipe combines the nutty flavor of almonds with the freshness of tomatoes, all cooked in a wok for a quick and healthy meal. It’s perfect for a family dinner or a gathering with friends.

Ingredients

  • 1 cup almonds
  • 4 large tomatoes
  • 2 tablespoons tomato paste
  • 1 wok

Instructions

  1. Begin by finely chopping the almonds to create the crust for the tomatoes.
  2. Slice the tomatoes into thick rounds, then spread the tomato paste on one side of each tomato slice.
  3. Press the chopped almonds onto the tomato slices, coating them evenly with the almond crust.
  4. Heat the wok over medium heat and add a small amount of oil.
  5. Carefully place the almond-crusted tomato slices into the wok and cook for 2-3 minutes on each side, or until the almonds are golden brown and the tomatoes are heated through.
  6. Once cooked, remove the almond-crusted tomatoes from the wok and serve immediately.
