Asian Chicken Stir-Fry

A delicious and flavorful Asian-inspired chicken stir-fry that will leave your taste buds wanting more. This recipe serves 4 people and is perfect for a quick and satisfying meal.
Ingredients
- 500g chicken breast, thinly sliced
- 250g rice noodles
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 garlic clove, minced
- 1 tablespoon ginger, grated
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1 cup snap peas
- Salt and pepper to taste
Instructions
- Cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
- Push the chicken to one side of the skillet and add the sliced bell pepper, julienned carrot, broccoli florets, and snap peas. Cook for about 3-4 minutes until the vegetables are crisp-tender.
- In a small bowl, whisk together the soy sauce and 2 tablespoons of water. Pour the sauce over the chicken and vegetables in the skillet. Stir everything together and cook for an additional 2 minutes until the sauce has thickened.
- Add the cooked rice noodles to the skillet and toss everything together until well combined.
- Serve the Asian chicken stir-fry hot and garnish with some chopped green onions, if desired.
