Asian Chicken Stir-Fry

A delicious and flavorful Asian-inspired chicken stir-fry that will leave your taste buds wanting more. This recipe serves 4 people and is perfect for a quick and satisfying meal.

Ingredients

  • 500g chicken breast, thinly sliced
  • 250g rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 garlic clove, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • Salt and pepper to taste

Instructions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  3. Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
  4. Push the chicken to one side of the skillet and add the sliced bell pepper, julienned carrot, broccoli florets, and snap peas. Cook for about 3-4 minutes until the vegetables are crisp-tender.
  5. In a small bowl, whisk together the soy sauce and 2 tablespoons of water. Pour the sauce over the chicken and vegetables in the skillet. Stir everything together and cook for an additional 2 minutes until the sauce has thickened.
  6. Add the cooked rice noodles to the skillet and toss everything together until well combined.
  7. Serve the Asian chicken stir-fry hot and garnish with some chopped green onions, if desired.
