Asian Chicken Stir-Fry

A delicious and flavorful Asian-inspired chicken stir-fry recipe that will leave your taste buds begging for more!

Ingredients

  • 4 chicken breasts, sliced into thin strips
  • 2 cups cooked rice
  • 8 ounces noodles (your choice)
  • 4 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken strips and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sliced onion. Sauté until the onion is translucent and fragrant, about 2-3 minutes. Add the red bell pepper, broccoli florets, snap peas, and julienned carrot. Stir-fry the vegetables until they are tender-crisp, about 5 minutes.
  3. While the vegetables are cooking, cook the noodles according to package instructions. Drain and set aside.
  4. Once the vegetables are cooked, return the chicken to the skillet. Add the cooked rice and noodles. Pour the soy sauce over the mixture and toss everything together until well combined. Cook for an additional 2-3 minutes to heat everything through.
  5. Serve the Asian chicken stir-fry hot and garnish with sliced green onions, if desired. Enjoy!
