A flavorful and nutritious vegetarian dish, perfect for a chilly autumn evening, celebrating the season's best ingredients.


  • 2 medium zucchinis, sliced into 1/4-inch thick rounds
  • 1 medium squash, peeled, seeded, and sliced into 1/4-inch thick wedges
  • 2 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Air fryer spray or cooking spray


  1. Preheat the air fryer to 375°F (190°C).
  2. In a large bowl, toss together zucchini and squash slices with olive oil, oregano, thyme, basil, salt, and pepper until the vegetables are evenly coated.
  3. Load the air fryer basket with the vegetable mixture, leaving some space between each piece for even cooking.
  4. Cook for 10-12 minutes, shaking the basket halfway through, until the vegetables are tender and lightly caramelized.
  5. Remove the vegetables from the air fryer and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs if desired.
