Ingredients

  • 2 ripe avocados, diced
  • 1 lb Brussels sprouts, trimmed and halved
  • 4 medium potatoes, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
