Ingredients

  • 2 ripe avocados, diced
  • 1 lb Brussels sprouts, trimmed and halved
  • 4 medium potatoes, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes for added heat

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced potatoes to the skillet and cook, stirring occasionally, until they are golden and crispy. This should take about 15-20 minutes. Season with salt and pepper.
  3. In another skillet, heat the remaining olive oil over medium heat.
  4. Add the Brussels sprouts to the skillet and sauté for 8-10 minutes, or until they are tender and slightly browned.
  5. Once the Brussels sprouts are cooked, add the diced avocados to the skillet and gently toss to combine with the Brussels sprouts.
  6. Season the avocado and Brussels sprout mixture with salt, pepper, and red pepper flakes if desired.
  7. Serve the avocado and Brussels sprout mixture over the crispy potatoes and enjoy!
