Bacon and Bok Choy Breakfast Bowl

This recipe combines the smoky flavor of bacon with the crispness of bok choy, all served over a bed of cereal for a unique and delicious breakfast bowl that’s quick and easy to make.


  • 8 slices of bacon
  • 4 heads of bok choy, chopped
  • 2 cups of cereal
  • 4 eggs
  • Salt and pepper to taste


  1. Place the bacon on a microwave-safe plate and cook in the microwave until crispy, about 4-6 minutes.
  2. While the bacon is cooking, place the chopped bok choy in a microwave-safe dish and cook in the microwave for 2-3 minutes, or until wilted.
  3. In a separate microwave-safe bowl, heat the cereal in the microwave for 1-2 minutes.
  4. In a non-stick skillet, fry the eggs to your desired doneness.
  5. To assemble, divide the cereal among 4 bowls, top with the cooked bok choy, crumbled bacon, and a fried egg. Season with salt and pepper to taste.
