Perfect dish for a comfort family dinner, this Baked Chicken Breast and Potatoes recipe is easy to follow and makes a great meal to serve for 4 people.
Ingredients
- 4 chicken breasts
- 4 large potatoes, cut into small cubes
- 4 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1/2 teaspoon of black pepper
- fresh herbs such as rosemary, thyme, or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Generously season chicken breasts with salt, garlic powder, paprika, and black pepper on both sides.
- Place sliced potatoes evenly in the bottom of the baking sheet.
- Drizzle the potatoes with 2 tablespoons of olive oil then season with salt and paprika.
- Place the seasoned chicken breasts on top of the potatoes.
- Drizzle the chicken with the remaining olive oil.
- Bake in the oven for 25-30 minutes or until the chicken is cooked through and the potatoes are crispy and golden brown.
- Garnish with fresh herbs and serve hot.
