Baked Chicken Breast and Potatoes Recipe

Perfect dish for a comfort family dinner, this Baked Chicken Breast and Potatoes recipe is easy to follow and makes a great meal to serve for 4 people.

Ingredients

  • 4 chicken breasts
  • 4 large potatoes, cut into small cubes
  • 4 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • fresh herbs such as rosemary, thyme, or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Generously season chicken breasts with salt, garlic powder, paprika, and black pepper on both sides.
  4. Place sliced potatoes evenly in the bottom of the baking sheet.
  5. Drizzle the potatoes with 2 tablespoons of olive oil then season with salt and paprika.
  6. Place the seasoned chicken breasts on top of the potatoes.
  7. Drizzle the chicken with the remaining olive oil.
  8. Bake in the oven for 25-30 minutes or until the chicken is cooked through and the potatoes are crispy and golden brown.
  9. Garnish with fresh herbs and serve hot.
