Baked Chicken with Roasted Vegetables Recipe

Ingredients

  • 4 boneless chicken breasts
  • 4 medium potatoes, peeled and sliced
  • 4 medium carrots, peeled and sliced
  • 1 bunch of asparagus, trimmed
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a large baking dish with some of the olive oil.
  3. In a large bowl, toss the sliced potatoes and carrots with the remaining olive oil, salt, and pepper. Arrange the vegetables in the baking dish.
  4. Place the chicken breasts on top of the vegetables and season with salt and pepper.
  5. Bake in the preheated oven for 30-40 minutes, until the chicken is cooked through and the vegetables are tender.
  6. During the last 10 minutes of baking, add the asparagus to the baking dish and continue to bake until tender.
  7. Remove from the oven and let it rest for a few minutes before serving.
