Baked Chicken with Roasted Vegetables Recipe

Chicken breast, potatoes, carrots, Asparagus
Enjoy your healthy and delicious Baked Chicken with Roasted Vegetables.
Ingredients
- 4 boneless chicken breasts
- 4 medium potatoes, peeled and sliced
- 4 medium carrots, peeled and sliced
- 1 bunch of asparagus, trimmed
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Grease a large baking dish with some of the olive oil.
- In a large bowl, toss the sliced potatoes and carrots with the remaining olive oil, salt, and pepper. Arrange the vegetables in the baking dish.
- Place the chicken breasts on top of the vegetables and season with salt and pepper.
- Bake in the preheated oven for 30-40 minutes, until the chicken is cooked through and the vegetables are tender.
- During the last 10 minutes of baking, add the asparagus to the baking dish and continue to bake until tender.
- Remove from the oven and let it rest for a few minutes before serving.
