Baked Salmon with Brussels Sprouts and Rice

Ingredients

  • 4 salmon fillets
  • 400g Brussels sprouts
  • 2 cups of rice
  • Salt and pepper to taste
  • Olive oil
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the rice and cook it according to package instructions.
  3. While the rice is cooking, trim the ends of the Brussels sprouts and cut them in half. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat, then spread them out in an even layer.
  4. Place the salmon fillets on the same baking sheet, skin side down. Drizzle them with olive oil and season with salt and pepper.
  5. Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and the Brussels sprouts are tender and slightly browned.
  6. Serve the baked salmon and Brussels sprouts over the cooked rice, and garnish with a squeeze of fresh lemon juice.
