Baked Salmon with Brussels Sprouts and Rice

Ingredients
- 4 salmon fillets
- 400g Brussels sprouts
- 2 cups of rice
- Salt and pepper to taste
- Olive oil
- Lemon wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the rice and cook it according to package instructions.
- While the rice is cooking, trim the ends of the Brussels sprouts and cut them in half. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat, then spread them out in an even layer.
- Place the salmon fillets on the same baking sheet, skin side down. Drizzle them with olive oil and season with salt and pepper.
- Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and the Brussels sprouts are tender and slightly browned.
- Serve the baked salmon and Brussels sprouts over the cooked rice, and garnish with a squeeze of fresh lemon juice.
