Beef and Fruit Stew

Oh, yum-o! This hearty stew is perfect for a chilly evening with the gang. And the best part? It's super easy to whip up!


  • 1 lb Stew Beef
  • 2-3 medium-sized Potatoes, peeled and cubed
  • 1/2 cup dried fruits (raisins, apricots)
  • 2 tbsp Olive Oil
  • 1 onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Beef Broth
  • 1 tsp Dried Thyme
  • Salt and Pepper to taste


  1. Preheat your grill to medium-high heat.
  2. Season the Stew Beef with Salt and Pepper. Grill the beef for 3-4 minutes per side, or until cooked to your liking. Let it rest for a few minutes before slicing it thinly.
  3. In a large Dutch oven or heavy pot, heat the Olive Oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the minced Garlic and cook for an additional minute, stirring constantly to prevent burning.
  5. Add the cubed Potatoes, Beef Broth, and Dried Thyme. Stir to combine, then bring the mixture to a boil.
  6. Reduce the heat to low and simmer the stew for 20-25 minutes, or until the Potatoes are tender.
  7. Stir in the sliced Grill Beef and dried fruits (raisins and apricots). Season with Salt and Pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.
