Beef Tenderloin with Chard and Rice

Ingredients
- 1.5 lbs Beef Tenderloin
- 1 bunch Chard (stems removed and leaves roughly chopped)
- 1 cup Rice
- 2 cups Water
- 2 tbsp Olive Oil
- 1 Onion (finely chopped)
- 2 cloves Garlic (minced)
- Salt and Pepper to taste
- 1 tbsp Soy Sauce
- 1 tsp Lemon Zest
- 1 tbsp Fresh Lemon Juice
- 1 tbsp Butter
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, bring 2 cups of water to a boil. Add a pinch of salt and the rice.
- Reduce the heat to low, cover, and let it simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.
- Fluff with a fork, then stir in the butter. Keep warm.
- Season the beef tenderloin with salt, pepper, and lemon zest.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Sear the beef tenderloin on all sides until browned, about 2-3 minutes per side.
- Lower the heat and cook to desired doneness (about 5-7 minutes for medium-rare).
- Remove from the skillet and let it rest for 5 minutes before slicing.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the chopped onion and cook until soft and translucent, about 3 minutes.
- Stir in the garlic and cook for another 30 seconds until fragrant.
- Add the chard leaves, soy sauce, and lemon juice. Cook until the chard is wilted and tender, about 3-4 minutes.
- Season with salt and pepper to taste.
- Slice the beef tenderloin into medallions.
- On each plate, serve a portion of rice, a generous helping of chard, and top with the beef tenderloin slices.
