Beet and Garlic Veggie Patties

These delicious veggie patties are packed with flavor and nutrients. They're a perfect option for a vegetarian meal and can be enjoyed by anyone, thanks to the rich and savory combination of beets and garlic.
Ingredients
- 3 cloves of garlic
- 2 medium-sized beets, cooked and peeled
- 1 can of chickpeas, drained
- 1 can of sweetcorn, drained
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 cup flour
- Olive oil for frying
Instructions
- In a food processor, combine the garlic, beets, chickpeas, and sweetcorn. Pulse until well combined but still slightly chunky.
- Transfer the mixture to a bowl and add the breadcrumbs, salt, pepper, cumin, and paprika. Mix until everything is well incorporated.
- Shape the mixture into patties and coat each patty with flour.
- Heat olive oil in a skillet over medium heat.
- Fry the patties for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel to drain any excess oil.
- Serve the beet and garlic veggie patties with your favorite side dish or in a burger bun with your choice of toppings.
