Ingredients
- 1 lb. bison meat, cubed
- 2 large beets, peeled and diced
- 2 cans of tuna or sardines (your choice), drained
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- 1 lemon, cut into wedges (for serving)
- Microwave (for steaming the beets)
Instructions
- Place the diced beets in a microwave-safe bowl with a splash of water.
- Cover the bowl with a microwave-safe lid or plastic wrap and microwave on high for 6-8 minutes, or until the beets are tender. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the bison cubes and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the ground cumin, ground coriander, and smoked paprika to the skillet. Stir well to combine and let the spices toast for about 1 minute.
- Return the cooked bison to the skillet.
- Add the microwaved beets and the drained canned fish. Stir gently to combine all the ingredients.
- Season with salt and pepper to taste. Cook for another 3-5 minutes, allowing the flavors to meld together.
- Transfer the mixture to a serving platter.
- Garnish with freshly chopped cilantro and serve with lemon wedges on the side.
