Bison and Kale Stir-Fry

  • 1 lb bison, thinly sliced
  • 4 cups kale, chopped
  • 2 cups rice
  • Olive oil
  • Salt and pepper


  1. Heat a drizzle of olive oil in a large pan over medium-high heat.
  2. Season the bison slices with salt and pepper, then add them to the pan. Cook until browned, then remove from the pan and set aside.
  3. In the same pan, add the kale and sauté until wilted.
  4. Meanwhile, cook the rice according to package instructions on the stove.
  5. Once the kale is wilted, add the cooked bison back to the pan and stir to combine.
  6. Serve the bison and kale stir-fry over the cooked rice.
