Bison and Kale Stir-Fry

Ingredients
- 1 lb bison, thinly sliced
- 4 cups kale, chopped
- 2 cups rice
- Olive oil
- Salt and pepper
Instructions
- Heat a drizzle of olive oil in a large pan over medium-high heat.
- Season the bison slices with salt and pepper, then add them to the pan. Cook until browned, then remove from the pan and set aside.
- In the same pan, add the kale and sauté until wilted.
- Meanwhile, cook the rice according to package instructions on the stove.
- Once the kale is wilted, add the cooked bison back to the pan and stir to combine.
- Serve the bison and kale stir-fry over the cooked rice.
