Bison and Potato Stew with a Tangy Twist
What Started it all:
Bison, Potato, vinegar (apple cider, balsamic), pressure cooker
This hearty Bison and Potato Stew is perfect for a cozy dinner with family or friends. The pressure cooker ensures that the bison becomes tender and flavorful, while the vinegar adds a delightful tang that enhances the dish.
Ingredients
- 1.5 lbs bison meat, cut into 1-inch cubes
- 4 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1/4 cup apple cider vinegar (or balsamic vinegar for a sweeter note)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Ingredients: Start by cutting the bison meat into 1-inch cubes and dicing the potatoes. Chop the onion and mince the garlic.
- Sauté the Aromatics: In the pressure cooker, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Brown the Bison: Add the bison cubes to the pot. Season with salt, pepper, thyme, and smoked paprika. Brown the meat on all sides for about 5-7 minutes.
- Add the Potatoes and Liquids: Once the bison is browned, add the diced potatoes to the pot. Pour in the beef broth and apple cider vinegar (or balsamic vinegar). Stir well to combine.
- Pressure Cook: Close the lid of the pressure cooker and seal it. Cook on high pressure for 30 minutes. Once done, let the pressure release naturally for about 10 minutes before manually releasing any remaining pressure.
- Serve and Garnish: Carefully open the lid and give the stew a good stir. Taste and adjust seasoning if necessary. Serve hot in bowls and garnish with fresh parsley if desired.
This Bison and Potato Stew is not just filling but also packed with flavor. The combination of tender bison, hearty potatoes, and a touch of vinegar creates a comforting dish that's perfect for any occasion. Enjoy your meal and happy cooking!
