Chicken Breast, Squash, garlic, food processor

A fantastic comfort food dish featuring Squash and Chicken Breast that will warm your heart.

  • 4 boneless, skinless chicken breasts
  • 2 medium-sized squash, peeled and cubed
  • 6 cloves of garlic, peeled and minced
  • 1 food processor (don't even think about using a bloody blender, you numpty!)

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and a pinch of paprika.
  3. Chop the squash cubes into smaller pieces. In a food processor, pulse the squash until it's coarsely chopped.
  4. Sauté the garlic cloves in a hot pan with a tablespoon of olive oil until they're soft and fragrant.
  5. Add the chopped squash to the pan and cook for 5 minutes, stirring occasionally.
  6. Add the chicken breasts to the pan, skin side up. Cook for 5 minutes, then flip them over and cook for another 5 minutes.
  7. Transfer the pan to the oven and roast for 20-25 minutes, or until the chicken is cooked through and the squash is tender.
  8. Serve hot. Garnish with some fresh parsley and a dollop of sour cream.
