Bold and Flavorful Asian Chicken Stir-Fry

Ingredients

  • 4 chicken breasts, boneless and skinless
  • 2 cups cooked rice
  • 8 ounces noodles (your choice)
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/2 cup green onions, chopped
  • 1/2 cup bell peppers, thinly sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup snap peas
  • 1/4 teaspoon red pepper flakes (optional, for an extra kick)
  • Salt and pepper, to taste

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 1 minute.
  2. Cut the chicken breasts into bite-sized pieces and season with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.
  3. While the chicken is cooking, prepare the noodles according to package instructions. Drain and set aside.
  4. Once the chicken is cooked, add the chopped green onions, sliced bell peppers, julienned carrots, and snap peas to the skillet. Stir-fry for about 2-3 minutes, until the vegetables are crisp-tender.
  5. In a small bowl, whisk together the soy sauce and red pepper flakes (if using). Pour the sauce over the chicken and vegetables, and toss to coat everything evenly.
  6. Add the cooked rice and noodles to the skillet, and gently stir-fry until everything is well combined and heated through.
