Bold and Flavorful Asian Chicken Stir-Fry

Ingredients
- 4 chicken breasts, boneless and skinless
- 2 cups cooked rice
- 8 ounces noodles (your choice)
- 1/4 cup soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/2 cup green onions, chopped
- 1/2 cup bell peppers, thinly sliced
- 1/2 cup carrots, julienned
- 1/2 cup snap peas
- 1/4 teaspoon red pepper flakes (optional, for an extra kick)
- Salt and pepper, to taste
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 1 minute.
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.
- While the chicken is cooking, prepare the noodles according to package instructions. Drain and set aside.
- Once the chicken is cooked, add the chopped green onions, sliced bell peppers, julienned carrots, and snap peas to the skillet. Stir-fry for about 2-3 minutes, until the vegetables are crisp-tender.
- In a small bowl, whisk together the soy sauce and red pepper flakes (if using). Pour the sauce over the chicken and vegetables, and toss to coat everything evenly.
- Add the cooked rice and noodles to the skillet, and gently stir-fry until everything is well combined and heated through.
