Bold and Flavorful Gluten-Free Ribs with Dried Fruit Potato Mash

Ingredients

  • 2 lbs ribs
  • 4 large potatoes
  • 1/2 cup dried fruits (raisins, apricots)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. Season the ribs with salt and pepper, then place them on a baking sheet and roast for 1.5 hours, or until tender.
  3. While the ribs are cooking, peel and chop the potatoes into chunks.
  4. Boil the potatoes in a pot of salted water until tender, then drain.
  5. In a food processor, combine the boiled potatoes with the dried fruits and pulse until smooth.
  6. Season the potato and dried fruit mash with salt to taste.
  7. Serve the ribs with a generous dollop of the dried fruit potato mash.
