Bold and Flavorful Slow Cooker Seitan and Zucchini Stew

Ingredients

  • 2 cups of seitan, chopped into bite-sized pieces
  • 2 zucchinis, sliced
  • 1/4 cup of flour
  • 4 cups of vegetable broth
  • Salt and pepper to taste
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of paprika
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, toss the seitan with flour until evenly coated.
  2. Heat olive oil in a skillet over medium heat. Add the onion and garlic, sauté until fragrant.
  3. Add the coated seitan to the skillet and cook until browned on all sides.
  4. Transfer the seitan, onion, and garlic to the slow cooker.
  5. Add the zucchini slices to the slow cooker.
  6. In a separate bowl, mix the vegetable broth with cumin, chili powder, and paprika. Season with salt and pepper.
  7. Pour the seasoned broth over the seitan and zucchini in the slow cooker.
  8. Cover and cook on low for 4-6 hours, or until the seitan is tender and the flavors are well combined.
  9. Serve the stew in bowls, garnished with fresh cilantro.
