  • 4 medium potatoes, diced
  • 2 bell peppers (1 red, 1 yellow), chopped
  • 1 cup rolled oats
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Prepare the Ingredients: Dice the potatoes and chop the bell peppers. Chop the onion and mince the garlic.
