Bold Bison and Kale Stew

Ingredients
- 2 pounds of bison, cubed
- 4 cups of kale, chopped
- 1 cup of flour
- 4 cups of beef or vegetable broth
- 1 onion, diced
- 4 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a drizzle of olive oil in a skillet over medium-high heat.
- Coat the bison cubes in flour, shaking off any excess, and brown them in the skillet. Do this in batches to avoid overcrowding the pan.
- Once the bison is browned, transfer it to the slow cooker.
- In the same skillet, add a bit more olive oil if needed and sauté the onions, garlic, carrots, and celery until they start to soften.
- Add the sautéed vegetables to the slow cooker with the bison.
- Pour the broth into the slow cooker and add the paprika, cumin, salt, and pepper. Give it a good stir.
- Cover the slow cooker and cook on low for 6-8 hours, or until the bison is tender.
- About 30 minutes before serving, stir in the chopped kale and let it cook until wilted.
- Taste and adjust the seasoning if needed.
