This hearty stew is a celebration of bold flavors and tender bison, slow-cooked to perfection with nutritious kale. It’s a fiery and flavorful creation that’s sure to impress your guests!

Ingredients

  • 2 pounds of bison, cubed
  • 4 cups of kale, chopped
  • 1 cup of flour
  • 4 cups of beef or vegetable broth
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium-high heat.
  2. Coat the bison cubes in flour, shaking off any excess, and brown them in the skillet. Do this in batches to avoid overcrowding the pan.
  3. Once the bison is browned, transfer it to the slow cooker.
  4. In the same skillet, add a bit more olive oil if needed and sauté the onions, garlic, carrots, and celery until they start to soften.
  5. Add the sautéed vegetables to the slow cooker with the bison.
  6. Pour the broth into the slow cooker and add the paprika, cumin, salt, and pepper. Give it a good stir.
  7. Cover the slow cooker and cook on low for 6-8 hours, or until the bison is tender.
  8. About 30 minutes before serving, stir in the chopped kale and let it cook until wilted.
  9. Taste and adjust the seasoning if needed.
  10. Serve the bold bison and kale stew hot, and enjoy the flavorful Mediterranean-inspired dish!
