Bold British Brussels Sprout Bake

  • 2 cups Cottage Cheese
  • 500g Brussels sprouts, halved
  • 1 can of diced tomatoes
  • Salt and freshly ground black pepper to taste


  1. Preheat the microwave to 375°F (190°C).
  2. In a microwave-safe dish, combine the halved Brussels sprouts and canned tomatoes. Season with salt and pepper to taste.
  3. Microwave the Brussels sprouts and tomatoes on high for 8-10 minutes, or until the sprouts are tender.
  4. While the sprouts are cooking, spread the cottage cheese evenly in the bottom of a baking dish.
  5. Once the sprouts are tender, carefully spoon them over the cottage cheese in the baking dish.
  6. Place the baking dish in the microwave and bake for an additional 5-7 minutes, or until the cottage cheese starts to brown slightly.
