Bold Lamb and Leek Stew with Dried Fruits
What Started it all:
Lamb, Leek, dried fruits (raisins, apricots), crockpot
<em><em>(Raises a hand for emphasis)</em></em>
Ingredients
- 2 lbs lamb, cut into cubes
- 2 leeks, sliced
- 1/2 cup dried raisins
- 1/2 cup dried apricots
- 1 crockpot
- Salt and pepper to taste
- 4 cups water or broth
Instructions
- Season the lamb cubes with salt and pepper.
- In a hot pan, sear the lamb until it's browned on all sides.
- Place the seared lamb in the crockpot.
- Add the sliced leeks, dried raisins, and dried apricots to the crockpot.
- Pour in the water or broth until the ingredients are just covered.
- Cook on low for 6-8 hours until the lamb is tender and the flavors have melded together.
