  • 1 cup lentils
  • 2 cups pumpkin, diced
  • 2 tablespoons honey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Heat the olive oil in a large pot over medium heat. Add the finely chopped onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.
  2. Add the diced pumpkin to the pot. Cook for another 5 minutes, stirring occasionally, until the pumpkin starts to soften.
  3. Stir in the lentils, dried thyme, and smoked paprika. Season with salt and pepper to taste. Cook for 1-2 minutes to let the spices bloom.
  4. Pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 25-30 minutes, or until the lentils and pumpkin are tender.
  5. Stir in the honey. Adjust the seasoning with more salt and pepper if needed. Let the mixture simmer for an additional 5 minutes to meld the flavors.
  6. Remove from heat and let it sit for a couple of minutes. Ladle the lentil and pumpkin mixture into bowls.
  7. Garnish with fresh chopped parsley. Serve hot and enjoy the bold, flavorful creation.
