Braised Short Ribs with a Twist

This dish is perfect for a special occasion or a cozy night in. The sweetness of the chocolate adds a surprising depth to the rich, fall-off-the-bone meat. A true comfort food for the senses.

Ingredients

  • 1.5 kg beef short ribs
  • 6 cloves of garlic, peeled and minced
  • 1 cup dark chocolate chips
  • Vegetable oil for frying

Instructions

  1. Preheat the oven to 160°C (325°F).
  2. Heat a tablespoon of oil in a large frying pan over medium-high heat. Sear the short ribs until browned on all sides, about 5 minutes. Remove the ribs from the pan and set aside.
  3. Reduce the heat to medium and add another tablespoon of oil to the pan. Add the minced garlic and cook, stirring occasionally, until fragrant and lightly caramelized, about 5 minutes.
  4. Add the browned short ribs back to the pan and add enough water to cover the ribs. Bring to a boil, then cover the pan with a lid and transfer to the preheated oven.
  5. Braise the short ribs for 2.5 hours, or until the meat is tender and falls off the bone.
  6. Remove the pan from the oven and stir in the dark chocolate chips until melted and well combined.
  7. Serve the short ribs with the rich, chocolatey sauce spooned over the top.
