Braised Short Ribs with a Twist

Ingredients
- 1.5 kg beef short ribs
- 6 cloves of garlic, peeled and minced
- 1 cup dark chocolate chips
- Vegetable oil for frying
Instructions
- Preheat the oven to 160°C (325°F).
- Heat a tablespoon of oil in a large frying pan over medium-high heat. Sear the short ribs until browned on all sides, about 5 minutes. Remove the ribs from the pan and set aside.
- Reduce the heat to medium and add another tablespoon of oil to the pan. Add the minced garlic and cook, stirring occasionally, until fragrant and lightly caramelized, about 5 minutes.
- Add the browned short ribs back to the pan and add enough water to cover the ribs. Bring to a boil, then cover the pan with a lid and transfer to the preheated oven.
- Braise the short ribs for 2.5 hours, or until the meat is tender and falls off the bone.
- Remove the pan from the oven and stir in the dark chocolate chips until melted and well combined.
- Serve the short ribs with the rich, chocolatey sauce spooned over the top.
