Ingredients

  • 2 cups of kale, chopped

  • 2 tablespoons mustard
  • 4 slices of whole grain bread
  • Olive oil spray
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 350°F.
  2. Cut the slices of whole grain bread into bite-sized pieces and place them in a bowl.
  3. Lightly spray the bread pieces with olive oil and season with salt and pepper.
  4. Air fry the bread pieces for 5-7 minutes or until golden and crispy.
  5. In a large bowl, combine the chopped kale, hemp seeds, and mustard.
  6. Toss the salad until the kale is well coated with the mustard.
  7. Divide the salad into 4 servings and sprinkle the air-fried croutons on top.
