British Pork Chops with Cauliflower Mash

Ingredients

  • 4 pork chops
  • 1 head of cauliflower
  • Apple cider vinegar
  • Balsamic vinegar

Instructions

  1. 1. Preheat the microwave on high.
  2. 2. Season the pork chops with salt and pepper on both sides.
  3. 3. Place the pork chops in a microwave-safe dish and cover with a lid or microwave-safe wrap. Cook on high for 6-8 minutes, or until the internal temperature reaches 145°F.
  4. 4. While the pork chops are cooking, cut the cauliflower into florets and place them in a microwave-safe bowl.
  5. 5. Add a splash of water to the cauliflower and cover the bowl with a microwave-safe wrap. Cook on high for 6-8 minutes, or until the cauliflower is tender.
  6. 6. Drain the cooked cauliflower and transfer it to a mixing bowl.
  7. 7. Mash the cauliflower with a fork or potato masher until smooth.
  8. 8. Season the cauliflower mash with salt, pepper, a splash of apple cider vinegar, and a drizzle of balsamic vinegar. Mix well.
  9. 9. Serve the pork chops alongside the cauliflower mash and enjoy!
