British Pork Chops with Cauliflower Mash

Ingredients
- 4 pork chops
- 1 head of cauliflower
- Apple cider vinegar
- Balsamic vinegar
Instructions
- 1. Preheat the microwave on high.
- 2. Season the pork chops with salt and pepper on both sides.
- 3. Place the pork chops in a microwave-safe dish and cover with a lid or microwave-safe wrap. Cook on high for 6-8 minutes, or until the internal temperature reaches 145°F.
- 4. While the pork chops are cooking, cut the cauliflower into florets and place them in a microwave-safe bowl.
- 5. Add a splash of water to the cauliflower and cover the bowl with a microwave-safe wrap. Cook on high for 6-8 minutes, or until the cauliflower is tender.
- 6. Drain the cooked cauliflower and transfer it to a mixing bowl.
- 7. Mash the cauliflower with a fork or potato masher until smooth.
- 8. Season the cauliflower mash with salt, pepper, a splash of apple cider vinegar, and a drizzle of balsamic vinegar. Mix well.
- 9. Serve the pork chops alongside the cauliflower mash and enjoy!
