This British-style loaded nacho chips recipe is perfect for a quick, healthy, and delicious meal for two. Using fresh and seasonal ingredients, it's a fun and easy way to bring everyone together in the kitchen and around the table.
Ingredients
- Nacho chips
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, finely chopped
- 1 cup cherry tomatoes, quartered
- 1/2 cup sweetcorn (fresh or frozen)
- 1/2 cup black beans, rinsed and drained
- 1 cup grated reduced-fat cheddar cheese
- 1 small avocado, diced
- 2 tablespoons fresh coriander, chopped
- 1 lime, cut into wedges
- 1 small red chili, finely sliced (optional)
- 1/4 cup natural yogurt or reduced-fat sour cream
Instructions
- Preheat your oven to 180°C (350°F).
- Spread the nacho chips in a single layer on a large baking tray.
- Scatter the diced red and green bell peppers, red onion, cherry tomatoes, sweetcorn, and black beans evenly over the nacho chips.
- Sprinkle the grated cheddar cheese over the top of the vegetables and nacho chips.
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a couple of minutes.
- Top with diced avocado, fresh coriander, and sliced red chili (if using).
- Serve immediately with lime wedges and a dollop of natural yogurt or reduced-fat sour cream on the side.
