Ingredients
- 2 cups of cooked rice
- 2 boneless, skinless chicken breasts, diced
- 1 cup buffalo sauce
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large skillet, cook the diced chicken over medium heat until fully cooked.
- Add the buffalo sauce to the skillet and stir to coat the chicken.
- In a separate bowl, mix the cooked rice with ranch dressing and spread it in the bottom of a serving dish.
- Spread the buffalo chicken over the rice.
