Ingredients

  • 2 cups of cooked rice
  • 2 boneless, skinless chicken breasts, diced
  • 1 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the diced chicken over medium heat until fully cooked.
  2. Add the buffalo sauce to the skillet and stir to coat the chicken.
  3. In a separate bowl, mix the cooked rice with ranch dressing and spread it in the bottom of a serving dish.
