Ingredients
- 1 lb fish fillets (any white fish like cod or haddock)
- 1 cup buttermilk
- 1 egg
- 2 tablespoons butter
- 1 cup flour
- Salt and pepper to taste
- 3 cups flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1 cup warm water (110°F/45°C)
- 2 tablespoons butter (melted)
- 1 tablespoon sugar
- 1 teaspoon salt
Instructions
- Poach the fish fillets in a pot of simmering water until they are opaque and cooked through (about 5-7 minutes). Remove from water and let cool slightly.
- In a bowl, whisk together the buttermilk, egg, and melted butter. Gradually add the flour, whisking until smooth. Season with salt and pepper.
- Flake the cooled fish fillets with a fork and gently fold them into the batter mixture.
- Heat a non-stick skillet over medium heat and add a small amount of butter. Spoon the fish batter into the skillet, forming small patties. Cook until golden brown on both sides (about 3-4 minutes per side).
- In a small bowl, combine the warm water, sugar, and yeast. Let sit for 5-10 minutes until the mixture becomes frothy.
- In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and melted butter. Mix until a dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm place for about 1-2 hours, or until doubled in size.
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a greased baking sheet.
- Cover the rolls with a damp cloth and let rise for another 30-45 minutes, or until doubled in size.
- Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes, or until golden brown. Brush the tops with additional melted butter if desired.
This meal brings together the delightful combination of crispy, tangy fish cakes and soft, warm yeast rolls. It's a perfect balance of textures and flavors that will leave your family or guests thoroughly satisfied. Enjoy!
