Cajun Chicken and Rice

Ingredients

  • 4 chicken breasts
  • 1 cup rice
  • 2 tablespoons cajun spices
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with cajun spices, salt, and pepper on both sides. Set aside.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the onion, garlic, and bell peppers. Cook until softened, about 5 minutes.
  4. Add the rice to the skillet and stir to combine with the vegetables. Cook for another 2 minutes.
  5. Stir in the diced tomatoes and chicken broth. Bring to a boil.
  6. Transfer the rice mixture to a baking dish and place the seasoned chicken breasts on top.
  7. Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  8. Remove the foil and broil for an additional 2-3 minutes to crisp up the chicken skin.
  9. Garnish with fresh parsley and serve hot.
