Cajun Chicken and Rice

What Started it all:
chicken, rice, cajun spices.
Ingredients
- 4 chicken breasts
- 1 cup rice
- 2 tablespoons cajun spices
- Salt, to taste
- Pepper, to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes
- 1 cup chicken broth
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with cajun spices, salt, and pepper on both sides. Set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the onion, garlic, and bell peppers. Cook until softened, about 5 minutes.
- Add the rice to the skillet and stir to combine with the vegetables. Cook for another 2 minutes.
- Stir in the diced tomatoes and chicken broth. Bring to a boil.
- Transfer the rice mixture to a baking dish and place the seasoned chicken breasts on top.
- Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
- Remove the foil and broil for an additional 2-3 minutes to crisp up the chicken skin.
- Garnish with fresh parsley and serve hot.
