Carrot and Chicken Stir Fry Recipe

1 cup of carrots, 1 pound chicken
This carrot and chicken stir fry recipe is perfect for a quick and healthy weeknight dinner for four. With just a handful of ingredients and minimal prep work, you’ll have a delicious meal on the table in no time!
Ingredients
- 4 cups of sliced carrots
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Start by preparing your ingredients. Slice 4 cups of carrots into thin matchsticks and set aside. Cut 1 pound of chicken breasts into small, bite-sized pieces.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic and sauté for 1-2 minutes.
- Add the chicken to the skillet and cook for 5-7 minutes or until browned and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced carrots and cook for 5-7 minutes or until they are soft and starting to brown.
- Return the chicken to the skillet with the carrots and season with salt and pepper to taste.
- Stir everything together and continue cooking for another 2-3 minutes until everything is heated through.
