Carrot Rice Recipe

Carrot Rice is a delightful and nutritious dish that combines the flavors of carrots and rice. It is a perfect option for a quick and healthy meal for four people. This recipe is easy to make and will surely impress your family and friends.

Ingredients

  • 2 cups of rice
  • 4 medium-sized carrots, grated
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (optional)
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
  2. Heat oil in a large pan or pot over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onions and minced garlic to the pan. Sauté until the onions turn translucent.
  4. Add the grated carrots to the pan and cook for about 5 minutes until they soften.
  5. Add turmeric powder, red chili powder (if desired), and salt. Mix well.
  6. Add the soaked rice to the pan and stir gently to combine it with the carrot mixture.
  7. Pour 4 cups of water into the pan and bring it to a boil.
  8. Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and fluffy.
  9. Once the rice is cooked, fluff it with a fork and garnish with fresh coriander leaves.
  10. Serve the carrot rice hot with raita or any side dish of your choice.
