Carrot Rice Recipe

Carrot Rice is a delightful and nutritious dish that combines the flavors of carrots and rice. It is a perfect option for a quick and healthy meal for four people. This recipe is easy to make and will surely impress your family and friends.
Ingredients
- 2 cups of rice
- 4 medium-sized carrots, grated
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (optional)
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh coriander leaves for garnish
Instructions
- Rinse the rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
- Heat oil in a large pan or pot over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and minced garlic to the pan. Sauté until the onions turn translucent.
- Add the grated carrots to the pan and cook for about 5 minutes until they soften.
- Add turmeric powder, red chili powder (if desired), and salt. Mix well.
- Add the soaked rice to the pan and stir gently to combine it with the carrot mixture.
- Pour 4 cups of water into the pan and bring it to a boil.
- Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and fluffy.
- Once the rice is cooked, fluff it with a fork and garnish with fresh coriander leaves.
- Serve the carrot rice hot with raita or any side dish of your choice.
