Carrot Soup Recipe for One

This carrot soup recipe is perfect for a cozy night in. It’s healthy and filling, with just the right amount of spice.


  • 1 large carrot, peeled and chopped
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cumin
  • 1 1/2 cups vegetable broth
  • Salt and pepper to taste
  • Parsley for garnish


  1. Heat a medium-sized pot over medium heat.
  2. Add chopped onion and garlic to the pot and sauté about 3-4 minutes until onions become translucent.
  3. Add in chopped carrots, ground ginger, and ground cumin. Cook for 2-3 minutes until carrots start to soften.
  4. Pour in vegetable broth and bring mixture to a boil.
  5. Reduce heat to low and let simmer for 15-20 minutes until carrots are completely soft.
  6. Using an immersion blender, puree the soup until it becomes a smooth consistency. Or, if you don't have an immersion blender, transfer the soup to a blender and blend until smooth.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley and enjoy!
