This carrot soup recipe is perfect for a cozy night in. It’s healthy and filling, with just the right amount of spice.
Ingredients
- 1 large carrot, peeled and chopped
- 1/2 onion, chopped
- 1 garlic clove, minced
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cumin
- 1 1/2 cups vegetable broth
- Salt and pepper to taste
- Parsley for garnish
Instructions
- Heat a medium-sized pot over medium heat.
- Add chopped onion and garlic to the pot and sauté about 3-4 minutes until onions become translucent.
- Add in chopped carrots, ground ginger, and ground cumin. Cook for 2-3 minutes until carrots start to soften.
- Pour in vegetable broth and bring mixture to a boil.
- Reduce heat to low and let simmer for 15-20 minutes until carrots are completely soft.
- Using an immersion blender, puree the soup until it becomes a smooth consistency. Or, if you don't have an immersion blender, transfer the soup to a blender and blend until smooth.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and enjoy!
