  • 1/2 head of cauliflower, cut into florets
  • 1/2 cucumber, thinly sliced
  • 1/4 cup grated parmigiano
  • 1/2 cup beluga lentils, cooked
  • 2 spring onions, finely chopped


  1. Steam the cauliflower florets until tender but still crisp. Let them cool to room temperature.
  2. In a large bowl, combine the cooked beluga lentils, cucumber slices, and chopped spring onions.
  3. Add the cooled cauliflower florets to the bowl.
