Cauliflower and Lentil Salad

Ingredients
- 1/2 head of cauliflower, cut into florets
- 1/2 cucumber, thinly sliced
- 1/4 cup grated parmigiano
- 1/2 cup beluga lentils, cooked
- 2 spring onions, finely chopped
Instructions
- Steam the cauliflower florets until tender but still crisp. Let them cool to room temperature.
- In a large bowl, combine the cooked beluga lentils, cucumber slices, and chopped spring onions.
