Ingredients
- 1 liter dashi broth (or chicken stock)
- 200g thinly sliced beef or pork
- 200g tofu, cut into cubes
- 100g mushrooms (shiitake, enoki, or your choice), sliced
- 1 cup napa cabbage, chopped
- 1 cup spinach or bok choy
- 1 carrot, julienned
- 2 green onions, sliced
- 1 tablespoon soy sauce
- 1 tablespoon miso paste
- 1 tablespoon sake (optional)
- 200g udon noodles (optional)
- Sesame seeds for garnish (optional)
Instructions
- In a large pot, bring the dashi broth to a simmer over medium heat.
- Add the soy sauce, miso paste, and sake to the broth, stirring until the miso is fully dissolved.
- Add the sliced beef or pork to the pot and cook for about 2-3 minutes until just cooked through.
- Add the tofu, mushrooms, napa cabbage, spinach or bok choy, carrot, and green onions to the pot.
- Allow the vegetables to cook for about 5-7 minutes or until they are tender.
- If using udon noodles, add them to the pot and cook according to package instructions (typically about 3-5 minutes).
- Taste and adjust seasoning if necessary, adding more soy sauce or miso as desired.
- Serve the Chanklo Nabe hot in individual bowls, garnished with sesame seeds if desired.
