Cheesy Chicken and Ham with Mushroom Sauce

Ingredients
- 4 boneless, skinless chicken breasts
- 8 slices of cooked ham
- 1 cup of shredded cheese (cheddar or mozzarella)
- 250g mushrooms, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Flatten the chicken breasts using a meat mallet to an even thickness.
- Lay 2 slices of ham on each chicken breast, then sprinkle the shredded cheese on top.
- Roll each chicken breast tightly and secure with toothpicks.
- Heat the olive oil in a skillet over medium-high heat. Add the chicken rolls and cook until browned on all sides, about 5 minutes. Remove the chicken rolls from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and garlic. Cook until the mushrooms are tender and slightly browned, about 5 minutes.
- Pour in the chicken broth and bring to a simmer. Let it cook for 2-3 minutes.
- Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes, or until the sauce thickens slightly.
- Place the chicken rolls in a baking dish and pour the mushroom sauce on top.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove the toothpicks from the chicken rolls before serving. Serve the cheesy chicken and ham with mushroom sauce hot and enjoy!
