Cheesy Chicken and Ham with Mushroom Sauce

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 slices of cooked ham
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 250g mushrooms, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Flatten the chicken breasts using a meat mallet to an even thickness.
  3. Lay 2 slices of ham on each chicken breast, then sprinkle the shredded cheese on top.
  4. Roll each chicken breast tightly and secure with toothpicks.
  5. Heat the olive oil in a skillet over medium-high heat. Add the chicken rolls and cook until browned on all sides, about 5 minutes. Remove the chicken rolls from the skillet and set aside.
  6. In the same skillet, add the sliced mushrooms and garlic. Cook until the mushrooms are tender and slightly browned, about 5 minutes.
  7. Pour in the chicken broth and bring to a simmer. Let it cook for 2-3 minutes.
  8. Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes, or until the sauce thickens slightly.
  9. Place the chicken rolls in a baking dish and pour the mushroom sauce on top.
  10. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  11. Remove the toothpicks from the chicken rolls before serving. Serve the cheesy chicken and ham with mushroom sauce hot and enjoy!
