Cheesy Chicken and Rice Bake

This Cheesy Chicken and Rice Bake is a delicious and nutritious meal that the whole family will love. It’s a perfect way to bring everyone together around the dinner table and enjoy a wholesome meal made with fresh and seasonal ingredients.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of rice
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 4 slices of ham
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the rice according to the package instructions and set aside.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. In a large skillet, heat some olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, until they are golden brown.
  5. Remove the chicken breasts from the skillet and set aside.
  6. In the same skillet, add the cooked rice and stir in half of the shredded cheese. Mix well until the cheese is melted and the rice is coated.
  7. Place the chicken breasts on top of the rice mixture in the skillet.
  8. Lay a slice of ham on each chicken breast.
  9. Sprinkle the remaining shredded cheese over the top of the ham.
  10. Cover the skillet with a lid or aluminum foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  11. Remove from the oven and let it rest for a few minutes before serving.
