Cheesy Chicken and Rice Bake

This Cheesy Chicken and Rice Bake is a delicious and nutritious meal that the whole family will love. It’s a perfect way to bring everyone together around the dinner table and enjoy a wholesome meal made with fresh and seasonal ingredients.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of rice
- 1 cup of shredded cheese (cheddar or mozzarella)
- 4 slices of ham
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the rice according to the package instructions and set aside.
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat some olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, until they are golden brown.
- Remove the chicken breasts from the skillet and set aside.
- In the same skillet, add the cooked rice and stir in half of the shredded cheese. Mix well until the cheese is melted and the rice is coated.
- Place the chicken breasts on top of the rice mixture in the skillet.
- Lay a slice of ham on each chicken breast.
- Sprinkle the remaining shredded cheese over the top of the ham.
- Cover the skillet with a lid or aluminum foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven and let it rest for a few minutes before serving.
