Cheesy Ham and Carrot Fried Rice

Ingredients
- 2 cups of cooked rice
- 1 cup of diced carrots
- 1 cup of diced ham
- 1 cup of shredded cheese
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the diced carrots to the skillet and cook for 5 minutes until slightly tender.
- Push the carrots to one side of the skillet and add the diced ham to the other side. Cook for 3 minutes until the ham is heated through.
- Add the cooked rice to the skillet and stir well to combine with the carrots and ham.
- Cook the rice mixture for 5 minutes, stirring occasionally, until the rice is heated through.
- Sprinkle the shredded cheese over the rice mixture and stir until the cheese is melted and well distributed.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
