Cheesy Ham and Potato Rice Cooker Casserole

This recipe combines the savory flavors of ham, potatoes, and cheese with a hint of mustard and onions, all cooked together in a rice cooker for a delicious and easy meal for four.
Ingredients
- 1 lb ham, diced
- 4 medium potatoes, peeled and sliced
- 2 tbsp mustard
- 1 onion, chopped
- 1 cup cheese, shredded
- 2 cups rice
- 3 cups water
- Salt and pepper to taste
Instructions
- Layer the sliced potatoes in the bottom of the rice cooker.
- Sprinkle half of the diced ham and chopped onions over the potatoes.
- Sprinkle half of the shredded cheese over the ham and onions.
- Repeat the layers with the remaining potatoes, ham, onions, and cheese.
- In a separate bowl, mix the water, rice, mustard, salt, and pepper, then pour the mixture over the layers in the rice cooker.
- Close the rice cooker and set it to the regular cooking setting.
- Once the rice cooker switches to the warm setting, let it sit for an additional 10 minutes to ensure everything is fully cooked.
