This delicious and creamy lasagna is packed with a variety of vegetables and a flavorful garlic aioli sauce. It’s a perfect meal for four people.

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the mushrooms, bell pepper, onion, carrots, and peas until they are tender.
  3. In a mixing bowl, combine the sour cream and cottage cheese.
  4. In a baking dish, layer the vegetables, followed by a layer of the sour cream and cottage cheese mixture, and then a layer of melted pepperjack cheese. Repeat the layers until all ingredients are used.
  5. Bake the lasagna in the preheated oven for 30-35 minutes, or until the cheese is golden and bubbly.
  6. While the lasagna is baking, prepare the garlic aioli sauce by mixing the garlic aioli with a bit of sour cream for a creamy consistency.
  7. Once the lasagna is done, let it cool for a few minutes before serving with a drizzle of the garlic aioli sauce.
