Chicken and Broccoli Pesto Bake

Ingredients
- 4 chicken breasts
- 2 cups broccoli florets
- 1 red bell pepper, sliced

- 2 cups cooked rice
- 1 cup pesto
Instructions
- Preheat your oven to 375°F (190°C).
- If you haven't already, cook the rice according to package instructions and set aside.
- Season the chicken breasts with salt and pepper. In a skillet over medium heat, sear the chicken for about 4-5 minutes on each side until golden brown. Remove from heat.
- In a pot of boiling water, blanch the broccoli florets for about 2 minutes, then transfer them to an ice bath to stop the cooking process. Drain and set aside.
- In a large mixing bowl, combine the cooked rice, blanched broccoli, sliced red bell pepper, and pesto. Mix well until everything is evenly coated.
- Spread the rice and vegetable mixture evenly in a greased 9x13 inch baking dish. Place the seared chicken breasts on top.

- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
